Overview

O’Rourke Family Estate (OFE) is looking for a Pastry Chef to join our incredible team of food lovers. Located in Lake Country, BC, O’Rourke Family Estate (OFE) is a 300-acre property with panoramic views of surrounding orchards, vineyards, rolling mountains and the glistening water of Okanagan Lake. Inspired by Europe’s most famous wineries, the property features 110 acres of vines, 300 metres of winding tunnels and 12,000 square-feet of cave space to store and age wines.  If you have previous restaurant experience, and want to develop a career in the wine industry, then we want to hear from you!

Position Summary

We are seeking a talented and dedicated Pastry Chef to join our team at a prestigious winery fine dining restaurant. As Pastry Chef, you will be responsible for overseeing the bakery and pastry section of the kitchen, ensuring the highest standards of food preparation, presentation, and consistency. This is an excellent opportunity for a passionate culinary professional to work in an exquisite setting and contribute to creating exceptional dining experiences that complement our award-winning wines.

RESPONSIBILITIES

 

  • Kitchen Management: Take ownership of the bakery and pastry section within the kitchen, ensuring smooth and efficient operation. This department is responsible for restaurant, retail, and catering offerings at multiple outlets.
  • Food Preparation: Create and execute a variety of high-quality pastries, desserts, and baked goods, including cakes, tarts, mousses, breads, and seasonal specials with a focus on using fresh, seasonal ingredients sourced locally and from the winery’s estate.
  • Quality Control: Maintain high standards of food hygiene, quality, and presentation in line with restaurant and health and safety regulations.
  • Menu Collaboration: Work closely with the Executive Chef and Estate Chef to develop and refine the menu, ensuring dishes are innovative, seasonally appropriate, and complement the winery’s wine offerings.
  • Team Support: Train and mentor junior kitchen staff, ensuring they maintain high standards of preparation and service, while fostering a positive and collaborative working environment.
  • Manage Inventory: of pastry ingredients, ensuring proper storage and handling to minimize waste and optimize efficiency.
  • Stay current: with industry trends and incorporate new techniques and ideas into the dessert offerings.

Requirements:

  • Proven experience as a Pastry Chef, Baker, or similar role, preferably in a high-end restaurant, hotel, or winery setting. 5 years’ experience required
  • Culinary degree or relevant training preferred.
  • Strong knowledge of food preparation techniques, presentation, and fine dining service.
  • Exceptional organizational skills and ability to work in a high-pressure environment.
  • Strong communication and leadership skills, with the ability to inspire and work collaboratively with the kitchen team.
  • An eye for detail and dedication to maintaining consistency in all aspects of food preparation.
  • Knowledge of food safety regulations and best practices.
  • Food Safe certification
  • WHMIS
